We made this in the cooking class today and it came out great. It is an easy recipe with some planning and brings back so many memories of Japan.

This rice dish is a great recovery dish after a long run, ride, or just dinner. 
This is something that can easily be thrown together with a little planned prep.

With a few of these easy recipes you can make a simple sandwich into something refreshing and tasty. I used Salmon since it is going strong right now, but you could sub. Halibut, Chicken, or even Avocado.

In addition to satisfying your sweet tooth, lucuma is gluten-free and a source of antioxidants, fiber, carbohydrates, vitamins and minerals necessary for bodily functions and of benefit to the immune system. When mixed with the other ingredients it makes for a great start to your day.
